The first thing I did on arrival in Santorini a few years ago was to grab a cocktail by the pool as the sunset, and the colours of the drink were so vibrant that I just had to try to replicate its visual charm back home. The ingredients in the original weren’t anything like those I’ve used here, but it did inspire the cocktail’s name. This is not a strong drink – it is more refreshing and fruity than alcoholic – so it’s ideal as a pre-mix to take on a picnic; if you fancy more of a kick, up the gin by 100ml.
Santorini sunset
Serves 6, and easily scalable
200ml gin – a London dry for preference
300ml passion fruit puree
300ml clementine juice
100ml lime juice
200ml cranberry juice drink, or to taste, to finish
6 mint sprigs, to garnish
Put a large handful of ice (I often freeze raspberries and mint into them, both for looks and extra flavour) into a jug, measure in all the liquid ingredients apart from the cranberry drink, and stir until nicely chilled. Pour into a flask or bottle, then seal and chill until you set off on your picnic.
To serve, fill six Collins-style glasses with more ice and strain the cocktail mix into each glass. Top with a dash of cranberry juice drink, drop a sprig of mint into each glass and your liquid sunset is ready.
