Carrot juice, gin and lime – it’s almost virtuous
You’ll need a juicer to make the cordial, but otherwise, this taste of winter is simplicity itself.
Carrot gimlet
Serves 1
For the cordial
About 10 carrots – or enough to make 600ml carrot juice
150g caster sugar
½ tsp citric acid
For the drink
40ml gin – we use No 3 London dry
30ml carrot cordial (see above and method)
1 squeeze fresh lime juice
Juice the carrots in a juicer until you have roughly 600ml of juice. Pour this into a bowl and stir in the sugar and citric acid until dissolved. Decant into a clean bottle or jar, seal and put in the fridge until needed – the cordial will keep for about a week.
To build the drink, measure the gin and carrot cordial into a cocktail shaker, add a squeeze of lime, then drop in a handful of ice. Shake hard, then double strain into a chilled coupe and serve.
